Corfian cuisine one might say that is also Mediterranean because it combines the same ingredients that are used from South Crete to Macedonia and from Rhodes to Corfu.

Bianco is a white fish stew infused with garlic and Sofrito which consists of sliced veal cooked with garlic, parsley and vinegar. Like many other places in Greece the traditional meat in Corfiot cooking is lamb which features in many of the island's day-to-day dishes, although pork, beef and chicken are equally popular. Herbs that are found in the countryside like oregano, thyme , dill, mint and basil are used to give their aromas to the local dishes.
Corfu is a fish lover's paradise because fresh fish can be found all year round and locals like to eat their fish as soon as it is off the net or the hook. Fried or grilled fish is a delicacy that is accompanied by a vinegrette sauce made with virgin olive oil and lemon juice and a bit of oregano.
Corfu nowdays offers a greater variety in wines than the old days, however "retsina" wine and "ouzo" still are very popular to the locals and to the visitors who want to expand their wine pallets.
Few local wineries make a serious effort in producing some very good quality reds, whites and roses. So far it seems this effort pays back in terms of wine quality as well as the actual income of the producers has an increase. cal breweries also produce unpasteurized beer pilsner and red ale.
