Easy Pan Roasted Fingerling Potatoes

Ingredients
  • 1 lb. potatoes
  • olive oil
  • salt and pepper to taste
  • Fresh or dried herbs to taste

  • Prep Time: 15 minutes
  • Cook Time: 20 minutes


  • Total Time: 35 minutes
  • Yield: Serves 6


Preparation
A family size grill will use about 1 pound of potatoes per batch. Peel potatoes and cut them into slices about 1/8" thick.
Place potatoes in a large bowl and drizzle with 2 tablespoons olive oil. Sprinkle with 2 teaspoons of cornstarch and toss the potato mixture together vigorously.

Preheat the grill and brush with a tiny bit of plain vegetable oil. Spread the potato slices evenly across the grill in a single layer.

Close grill and cook for 20-30 minutes, until the potatoes are brown, crisp, and cooked through. Check after 15 minutes to make sure the potatoes aren't burning. Sprinkle with salt and pepper and herbs of your choice and serve.

For an easier recipe, buy refrigerated or frozen sliced potatoes. If they are frozen, thaw them. Dry the potatoes in paper towels, then use as directed in the recipe.
