How to Make Chipotle Portobello Salad With Asiago-Lime Dressing
- 1). Whisk 2 tbsp. olive oil, 3 tbsp. lime juice, tamari, and chipotle chile together in a large mixing bowl. Season the mushrooms with salt and pepper to taste and brush with the chipotle sauce. Let the mushrooms marinate for 15 minutes.
- 2). Spray a large sauté pan with nonstick cooking spray and add 1 tbsp. olive oil and heat over medium heat. Add the mushrooms and cook for 5 minutes on each side or until lightly browned. Transfer the mushrooms to a cutting board and slice.
- 3). Put the romaine hearts in a large mixing bowl.
- 4). Combine the light cream, extra virgin olive oil, lime juice, Worcestershire sauce, Asiago cheese, green onions and garlic in a food processor and blend until smooth to make the Asiago-lime dressing.
- 5). Pour the asiago-lime dressing over the romaine hearts and toss to coat with wooden spoons. Transfer the dressed salad to a large serving platter and top with the mushrooms. Serve immediately.
