Talking about teas and its various forms ,there are so many varieties and the variation lies in the processing of each of them. Depending upon the differences in their processing following are various forms of tea:
WHITE TEA
GREEN TEA
YELLOW TEA
BLACK TEA
EARL GREY TEA
OOLONG TEA
HERBAL TEA
There are many more sub categories which comes under the broad categories mentioned above but today we'll discuss the latter only. As we move from white to black tea their taste ,texture,colour,flavor and aroma also changes, that is because their processing methods vary. Therefore here I am to give you all an inside picture of the various forms of teas
WHITE TEA:
White tea leaves are youngest and the most tender of all others, there is no oxidation or fermentation involved in formation of white tea, the tender leaves are immediately fired after the harvest, resulting in sweet and natuarally mild product.
These are the rare form of tea because they are harvested in only certain times of the year therefore are comparatively expensive.
GREEN TEA:
As we have already discussed a lot about green tea while comparing it with black tea but to brush up, it is that category of tea in which after plucking of the leaves they are steamed so as to prevent oxidation from occurring. The steaming of leaves avoids fementation leaving a mild earthy essence. It looks from yellow to green after brewing.
YELLOW TEA:
If we talk about yellow tea it stands somewhere in between black and green tea, here the damp tea leaves and allowed to sit and yellow. It is sweeter than green tea but milder than black. But some people might claim taste similarities between these tea types.
BLACK TEA:
Black tea is the most commonly used form of tea , as it can be served in various forms, like for example it is served hot with crème, served cold on ice by adding lime and sweetner etc. Processing of black tea is different from any other tea. Black tea leaves are fully oxidized they are exposed to air until their color turns black, and only then are they fired. This process of fermentation leads to concentration of chemical called tannins which results in the characteristic strong flavor of black tea.
EARL GREY TEA:
Earl Grey is the most popular flavor of tea amongst the Americans. It has a distinct aroma and flavor because of addition of an oil that has been extracted from the rind of the bergamot orange. An interesting fact about Earl Grey is that it has been named after the 2nd EARL GREY , a British prime minister in 1830s.
OOLONG TEA:
Oolong tea is again a flavor which lies in between green and black tea in terms of oxidation. Its range starts from 10% and goes upto 70% oxidation. It is generally brewed strong with little bitterness which leaves a sweet after taste. Oolong tea is processed in two diff methods one in which the teas are rolled into long curly leaves whereas In the other method they are pressed in a ball like form. InChinese language the oolong tea means "black dragon tea".
HERBAL TEA:
Herbal tea is a beverage made from infusion or decoction of herbs, spices, or other plant material in hot water. The characteristic feature of herbal tea is that it is caffeine free. Herbal tea is decaffeinated because it is made from leaves from which caffeine is removed and therefore it has various health benefits.
