What Cut Makes the Best Hamburger?
- Hamburgers need to be beefy and juicy but able to go crispy on the outside when cooked. Usually a combination of various cuts of beef are used. One combination is to use chuck, which is usually used in stewing and is tender and easy to grind; untrimmed brisket for some fat content; and boneless short rib. This combination makes the most succulent burger.
- Some people prefer a lower fat content and choose to use ground sirloin or top or bottom round beef. These are the leanest cuts of meat; however, the hamburgers will also be drier. It's worth bearing in mind that the leaner the meat, the less the burgers will shrink during cooking.
- Cuts with some fat on them, such as brisket and chuck, provide the best texture and arguably the best flavor. However, if a healthier hamburger is desired, leaner cuts such as sirloin and top and bottom round are best.
