      Spices bring to life even the blandest of dishes. Loved by carnivores and vegetarians alike, spices can define a tasty dish. For a vegetable based entree, using spices such as basil and oregano makes any item into an Italian feast. Add some cilantro and chipotle powder for a Mexican fiesta. Fresh lemon pepper adds a gentle spice and sweetness to the dish. Use fresh chopped herbs to change the flavor of soups, pastas and rice dishes. Saute, barbecue, marinate, and bake with these spices and the meal won't miss the meat.

      Healthy oils are a necessary fat for a vegetarian diet while also supplying a tasty alternative flavoring. Olive oil is a great way to add flavor without bad fats. Macadamia, peanut, coconut and almond oils all add a distinct flavor to the dish without weighing down the meal.

      The right sauce can transform the same meal with a simple switch in flavor. Vegetarian cooking relies heavily on sauces to add to the range of dishes available. Soy sauce and rice vinegar in a stir-fried vegetable dish gives texture and depth. The same meal prepared with boiled rice and veggies becomes a favorite when adding a white wine lemon sauce. Hot sauce cooked in with mushrooms gives a meaty texture some flare. A garlic marinara over fresh eggplant and noodles makes for a nutrient dense meal with plenty of flavor.

Bold bell peppers and pineapple make a good accent for many dishes, especially items cooked on a grill. Fresh, natural ingredients thrive when combined in vegetarian dishes.
