How to Juice Beet Greens

    • 1). Clean the beet greens thoroughly in cold water and allow to soak for at least five minutes to remove all sand and soil. Since you are not cooking them, you will need the greens to be as clean as possible.

    • 2). Rip or chop the greens into workable pieces. Place the beet greens (you can juice the beet bulb at the same time if you wish) into your juicer and turn on. Depending on your juicer model, you may need to use a force press to squeeze the greens through. Pour into an airtight locking container and store in the refrigerator.

    • 3). If you do not have a juicer, you can still juice the greens in a blender. Place the greens (and bulbs if you wish) in the blender, add 2 tbsp. of water and turn on. Thoroughly chop the greens for at least a full minute. When the greens are pulverized, run the pulp and juice through a strainer to remove any tough solid pieces.

    • 4). Mix together multiple juices and ingredients to make the beet juice palatable. Straight beet juice from either the greens or bulbs will cause the body to go through a quick detoxification, which could result in nausea, chills, fever, hives, and even paralysis of the vocal chords. Therefore, use your beet juice in moderation with other juices such as apple juice, celery juice, or carrot juice. Never use more than 1 to 2 oz. of beet juice at a time, and mix with at least 1 to 2 cups of water or juice from another source. Try to avoid mixing beet juice with other vegetables high in calcium.

    • 5). Add protein powders or oils to increase health benefits. Juices are like shakes; you can beef them up as you like. One to two scoops of protein powder a few drops of fish oil, flaxseed oil or cod liver oil will give your juice an energy boost and an added helping of omega-3 fatty acids.
