How to Peel Kholrabi
- 1). Wash kohlrabi thoroughly in water. Scrub the bulb-shaped stem with a vegetable brush if necessary to remove stubborn dirt.
- 2). Place kohlrabi on a sturdy cutting board. Trim greens with kitchen scissors and discard or reserve if you will be using them separately.
- 3). Remove any remaining leaf pieces with a paring knife. Cut away tough or woody portions of the kohlrabi. For a young, tender kohlrabi, no further peeling is necessary.
- 4). If the kohlrabi stem is on the larger and tougher side, peel away the purple or green outer skin with a vegetable peeler much as you would peel a tough beet. Holding the bulb in your hand, peel from top to bottom, pulling the peeler towards you. The tender interior of the stem will be a creamy white color.
- 5). Discard skin. Prepare peeled kohlrabi as planned, or store in refrigerator crisper drawer.
