My favorite homemade ice cream

Having an ice cream maker on your kitchen is not a must but for sure is the thing that brings small delights to your life. When I made my ice cream at home for the first time I was not only rewarded with very delicious product but it also contended me with the process by itself.

I want ot share one of my favorite recipes. I make it on my KitchenAid device and the recipe is adjusted for it (took it from KitchenAid Ice Cream Maker Recipes blog) but you may change it to fit your needs best. Just keep the basic idea.

Things you need:

2,5 cups of half-and-half, 8 egg yolks, 1 cup of whipping cream, 4 teaspoons of vanilla, 1/8 teaspoon salt.

The process:

Heat half-and-half until very hot over medium heat, yet not make it boil. Stir often. Then set aside.

Put sugar with egg yolks in mixer bowl. Mix around 30 sec with a wire whip on Speed 2. Keep mixing and gradually add half-and-half and mix until well blended. Place half-and-half mixture over medium heat and cook until small bubbles come out around edge stirring constantly. Don't make it boil. Place the mixture into a large bowl. Add whipped cream, vanilla and salt. Cover and chill for minimum 8 hrs.

Assemble dasher, freeze bowl and drive assembly as explained in attachment instructions. Turn on to Speed 1 (STIR). With a spout having container pour mixture into freeze bowl. Keep on stirring for 15-20 minutes or until the desired consistency is achieved. Immediately place ice cream into serving dishes or just freeze in a container.

Despite the variety of ice cream makers that the market can propose for you to choose, you have to understand that there are only 2 basic types of them.

The simplest and cheapest one is just a bowl with double walls. There is the coolant agent inside that saves €the cold€ previously accumulated in the freezer. So you have to put it into the freezer for a night. The KitchenAid device that I use has this kind of the thing.

But there is also an option to buy more professional-like appliance. It works as a mini fridge by itself with a Freon circulating inside and taking away the hot from ice cream mixture. You don't have to bother yourself with taking the bowl inside and out of the freezer and you may make an ice cream whenever you want. On the other hand the disadvantage is sure the price that is a little higher.
