How to Convection Cook a Leg of Lamb
- 1). Mix together 3 finely minced garlic cloves, 1 tsp. finely chopped rosemary, 1/2 tsp. dried lavender, 1 tsp. chopped mint leaves, 1 tbsp. Dijon mustard and a 1/4 cup olive oil in a bowl and set aside.
- 2). Heat the convection oven to 375 degrees Fahrenheit. Season the leg of lamb to taste on all sides with kosher salt and freshly ground black pepper.
- 3). Rub the spice mixture on all sides of the lamb. Place the leg of lamb on a sheet pan and place it in the center position of the convection oven.
- 4). Roast the lamb for 30 minutes and reduce the heat to 325 degrees Fahrenheit. Beginning at a high temperature and reducing the heat sears the lamb and produces a coloring and caramelising unattainable otherwise.
- 5). Roast the lamb for another hour for medium-rare. Alternatively, insert a meat thermometer in its thickest portion and check for a temperature of 145 degrees Fahrenheit for medium-rare, 150 degrees Fahrenheit for medium and 160 degrees Fahrenheit for well-done.
