How to Cook 2 Lb Beef Briskets
- 1). Preheat the oven to 375 degrees Fahrenheit and, using a sharp knife, trim off the fat from the brisket. Liberally sprinkle with salt and pepper and lightly dust with flour.
- 2). Place the 2 lb. brisket in a large cast-iron skillet and brown over a high heat. Continue to cook on each side until the surface of the meat develops some crisp spots. Then, remove the brisket from the skillet and set aside. Add the onions to the skillet and cook until golden brown. This will take 10 to 15 minutes and the onions will be wilted when done.
- 3). Set the brisket in a large casserole dish. Pour in the onions and any liquid remaining in the skillet over the top of the brisket. Using a metal spatula, spread the tomato paste over the top and sides of the brisket. Add in the carrot and garlic. Include another pinch of salt and pepper and place on a tight-fitting lid.
- 4). Place the casserole dish on the middle rack inside the oven and bake for 90 minutes. Take the casserole dish from the oven and move the brisket to a wood carving board. Using a sharp carving knife, slice the brisket into 1/8 inch slices. Then, arrange the slices in the casserole dish, at an angle and slightly overlapping each other.
- 5). Cover the casserole dish and return to the center rack of the oven. Continue to cook the brisket, at 375 degrees Fahrenheit, for two hours or until meat is fork-tender and brown. Once properly cooked, remove the casserole dish from the oven and transfer the carrot, onions and brisket to a large serving platter. Serve immediately.
