Ideas for Kosher Dairy Meals
- Broccoli cheese soup is a hearty start to a kosher dairy meal. Simply cook some broccoli, then blend it with the water you cooked it in, until it is smooth. Add 1/2 cup milk and 1 cup grated cheddar cheese for every 5 cups of broccoli puree. Heat these together until the soup is smooth and serve while hot. Swirl a little heavy cream over the top of the soup for decoration.
- A roasted vegetable lasagne is not only very tasty, but can be prepared and cooked in advance, and simply reheated when required. Zucchini, eggplant, onion, mushrooms, celery, carrots and garlic can be chopped and used with a tomato sauce as the filler between pasta sheets. Spoonfuls of ricotta cheese can be added to each layer of roasted vegetables. Mozzarella and Parmesan cheeses can be used to make the sauce for the top of the lasagne and grated for additional garnish over the top before baking. The roasted vegetable sauce could also be used as a pasta sauce with other forms of pasta, such as spaghetti.
- Blintzes, pastries and cup cakes can all benefit from the addition of a rich and flavorful cream or cream cheese filling. Simply add lemon or orange juice, zest and a little confectioner's sugar to whipped cream or cream cheese, before using it for filling.
- Loaded potato skins are a popular snack meal for kids. Bake some potatoes and scoop out the flesh. Cut the skins up and put in a baking dish and grate a variety of cheeses over them, before returning to the oven. Remove when the cheese bubbles, and top with chopped chives and a few dollops of sour cream. Alternatively, you can use kosher potato chips instead of potato skins. Another kid-friendly snack incorporates 3 tpsp. each of honey, butter and peanut butter, which are heated together then poured over Chex mix or mini pretzels.
